How do I set these permissions?

When creating/editing the sessions through the event dashboard, find the 'who can watch' and 'who can participate' section and select your preference for both. Don't forget to hit save at the bottom of the page.

For instances where you have to select an attendee or a moderator, ensure the person(s) is/are registered for the event before attempting to select them.
